The Thai Breakfast
In the western world we have this fascination about breakfast that it should be, muesli/oatmeal/cornflakes with milk together with orange juice or English style which we have eggs, sausage, beans and toast together with a cup of coffee or tea, very different to the Thai breakfast.
In Thailand breakfast is simply just another meal and it could be your favorite curry with rice or a stir fry. If you are more into having some “western similar” breakfast you can try the “Jokk”, which is rice porridge with egg, chicken or pork flavor.
Today, I, The Fighting Chef is going to teach you how to make your favorite Thai breakfast which many foreigners love and eat more than twice a day.
Phad – Kra – Pau – Khai – Dao: Stir fried beef/chicken/pork with Thai Basil & a fried egg
Ingredients:
1 tbsp coconut oil (the one without flavor)
4 garlic cloves, bashed with the knife and minced
3-9 small Thai chilies, bashed with the knife and finely chopped
300 g meat of choice (minced meat)
½ tbsp light soy sauce
1 tbsp oyster sauce
a few splashes of dark soy sauce
1 tbsp sweetener (white sugar, brown sugar)
10-20 thai basil leaves (10 if big and 20 if small)
1 tbsp coconut oil
2 eggs
Cooking Method:
Start by soaking the basil leaves in water. Heat the coconut oil in a medium frying pan then add in the garlic cloves, chillies and stir fry until the garlic starts to brown. Add in the minced meat and stir fry until it’s cooked through. Lower the heat down to lowest and add the sauces together with the sweetener and stir to mix. Turn off the heat and add in the soaked basil leaves, stir around until the leaves are wilted. Now throw in a tablespoon of oil in the pan and add in the 2 eggs and cook until done, try not to crack the yolk. Serve this together with white rice.
